  6. Pour the raspberry jam into small coffee cups or other suitable molds and put them in the freezer for 5 minutes to set.
  7. Take the molds out of the freezer and add the panna cotta mixture on top. Put them in the fridge for an hour.
  8. To get the panna cotta out of the mold, place the mold in hot water for 5–10 seconds and turn it out onto a plate.

So what actually happens if you heat the gelatin too quickly? Above 60 °C the lumps lose their ability to gel and the mixture won’t set. Keep the water bath warm, not hot, and stir slowly: those couple of minutes of patience are the difference between a runny and a firm panna cotta.
