Protein cake with berries: a quick recipe
Protein cake is a good choice when a sweet craving hits but you want something more nourishing than a regular cake. This berry version is made quickly in the microwave and works well for breakfast, as a snack or after a workout.
Why does protein cake work?
Some recipes don’t need much of an introduction. A bowl, a spoon, a microwave and a few familiar ingredients. That’s exactly what this berry protein cake is.
The problem with a regular cake is simple: lots of sugar, little protein, and you’re hungry again pretty quickly. This one is different. Whey Vanilje, Greek yogurt 0%, egg and milk give the cake a more protein-rich base. Coconut flour and rice flour make the texture denser, but not dry.
Berries add tartness. Honey adds sweetness. Peanut butter and a protein bar make the top of the cake a little richer. A simple truth: if a dessert tastes like a real dessert, it’s easier to fit into your diet.
Protein cake: ingredients
The original amounts are given below exactly as they are. Don’t change the grams on your first attempt, because a cake cooked in the microwave depends quite a lot on the ratio of liquid to flour.
- Coconut flour 20g
- Rice flour 30g
- Whey Vanilje 20g
- Greek yogurt 0% 60g
- Milk 2.5 % 70g
- Egg 1 pc
- Honey 15g
- Peanut butter 10g
- Protein bar
- Coconut oil 3g
- Mixed berries 60g
- Baking powder 1 tsp
- Cinnamon
- Liquid sugar substitute
If you use frozen berries, let them thaw briefly first, or heat them a bit longer for the sauce. Fresh berries give a brighter flavor, while frozen berries often make the sauce juicier.
How do you make protein cake?
Preparation is quick, but the order matters. Dry ingredients go in one bowl, wet ones in another. That way the batter doesn’t get big lumps of flour and the cake cooks more evenly.
- Mix the protein powder, flours, baking powder and cinnamon. In another bowl, mix the egg, yogurt, milk and liquid sugar substitute.
- Add the wet ingredients to the dry ones and mix gently. Add 30g of berries and mix again.
- Lightly grease a heatproof bowl with coconut fat. A very small amount is enough. About 1g
- Pour the cake mixture into the bowl and microwave for 1.5 minutes.
- For the berry sauce, put 2g of coconut fat in a small pan and gently heat the berries and honey. Turn the heat off and let the mixture cool slightly before pouring it over the cake.
- Take the bowl out of the microwave and turn it upside down onto a plate. If needed, use a knife to loosen the edges from the side of the bowl.
- Top the cake with a chopped protein bar and drizzle with peanut butter.

So what actually happens? The baking powder helps the cake rise, the protein powder binds the mixture and the yogurt keeps the inside softer. If your microwave is very powerful, the cake may be done sooner. If the center is still too liquid, give it a short extra burst, but don’t cook it dry.
Practical tips for a better result
The heatproof bowl should be taller rather than wide. In a wide bowl the cake stays flat and the edges may dry out faster. In a taller bowl, the result looks more like a small cake.
Don’t overmix the batter. Once everything has come together and there are no big dry spots left, that’s enough. Overmixing can make the cake rubbery, especially if the protein powder is strongly binding.
You can adjust the sweetness with Huxol, but the berry sauce does a lot on its own. Honestly, the warm berry sauce is the best part of this recipe: it makes a simple microwave cake feel much more homemade.
If you want to take the cake with you, let it cool completely before putting it in a container. A warm cake creates steam in the container and turns damp. When eating at home, the best moment is right after adding the berry sauce.
